Inferior spaghetti is often found produced with other kinds of flour, especially outside Italy. Fresh spaghetti should be prepared with grade '00' flour.

Spaghetti, tomato, basil and mozzarella


Ingredients for 3 people: 380 grams of spaghetti, 150 grams of mozzarella, 350 grams of tomatoes, olive oil, basil, salt and pepper.

Preparation: Heat the tomatoes so you can skin them and then cut them into strips. Cut the mozzarella into cubes and leave aside. Boil the water, salt it and add the spaghetti once boiling. Drain the spaghetti when cooking is finished. Serve them on the plates, and add the tomatoes and mozzarella. Mix a little and add the oil, a little pepper and some fresh basil.
